Michael Norman’s Chicken Enters the Race | Athlete's Cookbook | Nike
Elite sprinter Michael Norman is facing a new challenge: He’s got to outcook his roommate, teammate, and competitor, Rai Benjamin. Rai visited the set of Athlete’s Cookbook a few weeks back to share his favorite way to cook and serve rib-eye steaks. That’s when the pro hurdler laid down the gauntlet: “I’m the better cook!” he said. In this week’s episode, Michael attempts to prove Rai wrong—and he has two secret weapons. The first is a competitive spirit that knows no bounds. (Like, he may or may not have bet his shoes at one point.) But his ace in the hole? His mom’s chicken teriyaki recipe. Plenty of protein. Just enough carbs. All the veggies. You can’t mess with mom’s chicken, Rai. Ingredients (Serves 3 to 4)   For the chicken: 1 cup teriyaki sauce ½ cup sake Ginger paste, to taste Garlic paste, to taste ¼ cup sesame seeds 6 boneless, skinless chicken thighs For the salad: 1 head romaine lettuce, chopped 3 Persian cucumbers, chopped 1 head broccoli, cut into bite-size florets ¼ cup sesame dressing For the rice: 1 cup uncooked brown rice How to make it: In a large bowl, whisk together the teriyaki sauce, sake, a dollop apiece of ginger paste and garlic paste (both have some kick, so use them sparingly), and sesame seeds. Submerge the chicken thighs in the marinade, then refrigerate them for at least 1 hour—or up to 10 if you’re patient enough. While the chicken marinates, cook the rice according to the package directions. Steam and chill the broccoli. Then throw the lettuce, cucumber, and broccoli in a medium bowl and toss with the sesame dressing to taste. Heat a grill or grill pan to medium heat, then add the chicken thighs in an even layer. Cook for about 4 minutes, then flip and cook for another 4 minutes. You’ll know the thighs are done when a thermometer stuck in the thickest part reaches 165°F. Slice the chicken thighs and serve them on top of a scoop of rice with the salad on the side. Get to eating.
