Pineapple Skirt Steak | Food Meets Function | Nike
Some foods seem destined to be together. The enzymes and acidity of pineapple can help break down the protein and fat in steak, improving digestion and absorption. This dish adds tender broccolini to the mix for a dose of vitamins and minerals. Try it a couple hours after your workout to help build muscle and boost recovery. Ingredients: ¾ cup pineapple juice 1 teaspoons Himalayan sea salt 2 cloves garlic, smashed 1 orange, juiced 6 oz skirt steak 1 tablespoon coconut oil ¼ onion, diced ½ inch ginger, minced 1 cup broccolini ⅓ cup chopped pineapple 1 tablespoon liquid aminos ½ cup sprouted quinoa, cooked 1 tablespoon sesame seeds ¼ cup green onions, sliced Sea salt and pepper to taste How to Make it: Combine pineapple juice, sea salt, garlic, orange juice, and skirt steak, then marinate for at least 6 hours. Once marinated, sear the steak in a cast-iron skillet over medium-high heat until cooked to desired doneness, about 3 minutes per side. Remove steak from skillet and set aside to rest, about 5 minutes. Meanwhile, add oil until simmering and cook garlic andginger over medium heat for 1 minute. Add broccolini and pineapple, then sauté until just done, about 4 minutes. Pour over liquid aminos and toss to coat. Slice the steak against the grain. Place the broccolini and pineapple on top of the cooked quinoa, then top with sliced steak. Garnish with sesame seeds, green onion, salt, and pepper.
