Salmon Grain Bowl | Food Meets Function | Nike
Salmon might be an athlete’s ideal meal. Not only does it deliver the protein needed to build muscle, it’s also one of the richest natural sources of Omega-3s, which can help sharpen focus and boost recovery. This dish, which combines the fish with fresh veggies and sprouted quinoa, is the perfect fuel-up a few hours before your workout. Ingredients: For the salmon: 4-6 oz salmon filet Sea salt and pepper to taste 1 lime, sliced For the grain salad: 1 tablespoon coconut oil 2 cups cooked sprouted quinoa 4 oz snap peas, sliced 3 oz green beans, sliced 2 green onions, sliced ¼ cup cherry tomatoes, halved ¼ cup walnuts, toasted and chopped ½ avocado, sliced ¼ teaspoon red pepper flakes 1 lime, juiced How to Make it: For the salmon: Preheat the oven to 325 degrees. Season the salmon filet with salt and pepper on both sides. Arrange the lime slices on a small baking sheet and place the salmon filet on top. Bake to desired doneness, about 17-25 minutes. For the grain salad: While the salmon is cooking, assemble the salad. In a medium pan, heat the coconut oil over medium heat and brown the cooked quinoa, about 4 minutes, taking care not to stir too often. Toss in the snap peas, green beans, and green onions, then cook until vegetables are just softened but still bright green, about two minutes. Remove the pan from the heat and toss in tomatoes, walnuts, and avocado, stirring gently to combine. Toss with red pepper flakes and lime juice, then top with salmon. Serve immediately.
