Salmon Grain Bowls | Prepped to Win | Nike
Training takes a lot out of you—but a dinner packed with protein, healthy fats, and complex carbs can put the energy right back in. Cook these Salmon Grain Bowls just once over the weekend, then line up five portions for refueling all week long. Ingredients: For the Salmon: 1½ pounds salmon, divided into 5 portions 1 tsp. grapeseed oil 2 Tbsp. lemon juice Pinch salt Pinch pepper For the Dill-Yogurt Sauce: 2 cups Greek yogurt, strained ¼ cup chopped dill Zest and juice of 1 lemon Pinch of salt For the Asparagus Brown Rice Salad: 4 cups chicken bone broth 2 cups brown rice, rinsed and drained Pinch of salt 2 pounds asparagus, peeled into strips 4 radishes, thinly sliced 1 tsp. olive oil Zest and juice of 2 lemons ¼ cup chopped mint How to Make it: For the Salmon: Preheat the oven to 325 then line a baking sheet with parchment paper and place the salmon on it. Brush the salmon with grapeseed oil and lemon juice. Season with salt and pepper and bake until salmon reaches 145 degrees, about 15-20 minutes. For the Dill-Yogurt Sauce: Combine yogurt, dill, lemon zest, lemon juice, salt, and pepper in a small bowl. Reserve, preferably in a small container for each dish, for topping each bowl. For the Asparagus Brown Rice Salad: In a large stockpot, bring chicken bone broth to a boil. Add brown rice and salt and cook until tender, approximately 20-25 minutes. Drain and allow rice to cool completely. In a large bowl, combine rice, asparagus, radish, lemon zest, lemon juice, olive oil, salt and pepper. Top with mint and separate into 5 containers, along with salmon. Seal and refrigerate dish for up to 3 days, or freeze and store for up to 2 weeks.
